Butter Folded Yeast Rolls

Ingredients

  • 1 cup sweet milk
  • ½ yeast cake
  • 1 tbsp butter
  • 2 tsp sugar
  • 1 tsp salt
  • Flour, as needed
  • Butter, for topping

Method

  1. 1 Scald the milk and melt the butter in it. Let cool until lukewarm.
  2. 2 Dissolve the yeast, sugar, and salt in the milk mixture. Stir in flour until the dough is as stiff as bread dough.
  3. 3 Cover and let rise overnight in a warm place.
  4. 4 Roll the dough thin and cut into rounds with a biscuit cutter.
  5. 5 Place a small lump of butter on each roll, fold in half, and let rise again until light.
  6. 6 Bake in a moderate oven (350°F) for about 20 minutes.
