Butter Currant Sandwich Cookies
Ingredients
- 1 lb all-purpose flour
- 8 oz butter
- 8 oz currants
- 2 oz sugar
- 6 drops lemon extract
- Water
Method
- 1 Mix flour and sugar, then add water to form a smooth, not too wet paste.
- 2 Roll out the dough, spread with butter, and roll again; repeat this process three times total.
- 3 Roll the final dough very thin and cut into rounds or squares.
- 4 Spread half of the pieces thickly with currants.
- 5 Place the remaining pieces on top to form sandwiches.
- 6 Bake in a 425°F oven until light brown.
