Butter Brushed Yeast Rolls
Ingredients
- 1 cup milk
- 1 yeast cake
- 1/4 cup milk
- 1 1/2 cups flour
- 1/2 teaspoon salt
- 1/4 cup melted butter
- additional flour for kneading
- butter for brushing
Method
- 1 Make a sponge by mixing 1 cup milk, 1 dissolved yeast cake, and 1 1/2 cups flour. Beat thoroughly, cover, and let rise at 70°F until light.
- 2 Add 1/2 tsp salt and 1/4 cup melted butter. Add enough flour to knead. Knead until elastic, then let rise at 70°F until doubled in bulk.
- 3 Punch down dough and shape into small balls. Let rise again, covered with a cloth and a dripping pan, until light.
- 4 Press the handle of a small wooden spoon deeply across the center of each ball. Brush with butter and press the edges together.
- 5 Place rolls close together in a baking pan. Brush the points of contact with butter and bake.
