Butter Brushed Yeast Rolls

Ingredients

  • 1 cup milk
  • 1 yeast cake
  • 1/4 cup milk
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/4 cup melted butter
  • additional flour for kneading
  • butter for brushing

Method

  1. 1 Make a sponge by mixing 1 cup milk, 1 dissolved yeast cake, and 1 1/2 cups flour. Beat thoroughly, cover, and let rise at 70°F until light.
  2. 2 Add 1/2 tsp salt and 1/4 cup melted butter. Add enough flour to knead. Knead until elastic, then let rise at 70°F until doubled in bulk.
  3. 3 Punch down dough and shape into small balls. Let rise again, covered with a cloth and a dripping pan, until light.
  4. 4 Press the handle of a small wooden spoon deeply across the center of each ball. Brush with butter and press the edges together.
  5. 5 Place rolls close together in a baking pan. Brush the points of contact with butter and bake.
