Butter Braised Green Beans With Tomato

Ingredients

  • 1 cup haricots (haricots verts or green beans)
  • 1 carrot, sliced
  • 1 onion, sliced
  • Salt to taste
  • 2 cloves
  • 1 pinch dried herbs
  • 1 shallot, chopped
  • Butter
  • Pepper to taste
  • 2 tbsp tomato purée
  • Minced parsley for garnish

Method

  1. 1 Soak the haricots in cold water for six hours. Drain.
  2. 2 Boil the haricots in fresh water with the carrot, onion, salt, cloves, and dried herbs until tender. Drain well.
  3. 3 In a skillet, fry the chopped shallot in butter until soft.
  4. 4 Add the cooked haricots, pepper, salt, and tomato purée. Stir well to combine.
  5. 5 Serve hot, garnished with minced parsley.
