Butter Braised Green Beans With Tomato
Ingredients
- 1 cup haricots (haricots verts or green beans)
- 1 carrot, sliced
- 1 onion, sliced
- Salt to taste
- 2 cloves
- 1 pinch dried herbs
- 1 shallot, chopped
- Butter
- Pepper to taste
- 2 tbsp tomato purée
- Minced parsley for garnish
Method
- 1 Soak the haricots in cold water for six hours. Drain.
- 2 Boil the haricots in fresh water with the carrot, onion, salt, cloves, and dried herbs until tender. Drain well.
- 3 In a skillet, fry the chopped shallot in butter until soft.
- 4 Add the cooked haricots, pepper, salt, and tomato purée. Stir well to combine.
- 5 Serve hot, garnished with minced parsley.
