Butter Boiled Beets
Ingredients

- salt
- pepper
Method
- 1 Wash beets well without breaking the skin to preserve color.
- 2 Boil beets for 1 hour if young, or 2-3 hours if old, until tender.
- 3 Transfer beets to cold water and remove the skins.
- 4 Season with butter, salt, and pepper. Serve whole if small or sliced if large.
