Butter Bean Puree With Fried Onions

Ingredients

  • dried brown, white, or flageolet beans
  • water
  • salt (optional)
  • butter
  • fried onions (optional)

Method

  1. 1 Soak beans overnight in rainwater or boiled water.
  2. 2 Cook beans in the soaking water over low heat until half done, adding salt if desired.
  3. 3 Continue cooking until very tender, adding boiling water if needed; do not stir.
  4. 4 Press beans through a sieve to remove skins, thinning with bean water or hot water to a porridge consistency.
  5. 5 Stir in a knob of butter and optionally fried onions, then heat briefly in the oven.
