Butter Basted Roasted Turkey With Dressing

Ingredients

  • 1 poultry bird (turkey, chicken, or duck)
  • Dressing (for stuffing)
  • ½ cup butter
  • ½ cup water
  • Salt
  • Pepper
  • Soft butter (for rubbing)

Method

  1. 1 Clean poultry inside and out with cold water. Stuff with dressing.
  2. 2 Truss the bird by tying wings and legs securely with twine or skewers to maintain shape.
  3. 3 Rub the bird all over with soft butter and sprinkle generously with salt and pepper.
  4. 4 Place on a rack in a roasting pan and put into a very hot oven (425°F).
  5. 5 Prepare a basting mixture of ½ cup butter and ½ cup water. Keep hot and baste every 10-15 minutes.
  6. 6 Roast for 1-2 hours for chicken/duck or 3 hours for an 8-pound turkey. Cover with paper if browning too quickly.
