Butter Basted French Omelet

Ingredients

  • 6 large eggs
  • 1/2 cup heavy cream
  • 1/4 lb (4 oz) butter
  • Salt, pepper, and nutmeg to taste
  • 1 tbsp fresh parsley, finely chopped
  • 1 tbsp green onion, finely chopped

Method

  1. 1 Crack eggs into a bowl, add cream, salt, pepper, and nutmeg. Beat vigorously until well combined.
  2. 2 Melt butter in an omelet pan over medium heat until hot and lightly browned.
  3. 3 Pour in egg mixture. Cook until set, then fold the omelet in half.
  4. 4 Slide onto a plate. Serve plain or with white sauce. Optionally garnish with parsley and green onion.
