Butter Basted French Omelet
Ingredients
- 6 large eggs
- 1/2 cup heavy cream
- 1/4 lb (4 oz) butter
- Salt, pepper, and nutmeg to taste
- 1 tbsp fresh parsley, finely chopped
- 1 tbsp green onion, finely chopped
Method
- 1 Crack eggs into a bowl, add cream, salt, pepper, and nutmeg. Beat vigorously until well combined.
- 2 Melt butter in an omelet pan over medium heat until hot and lightly browned.
- 3 Pour in egg mixture. Cook until set, then fold the omelet in half.
- 4 Slide onto a plate. Serve plain or with white sauce. Optionally garnish with parsley and green onion.
