Butter Bacon Stewed Kidney Beans
Ingredients
- 1 cup kidney beans
- 1 chopped onion
- 1 carrot
- 3-4 slices bacon
- pinch of baking soda
- butter
- salt
- pepper
Method
- 1 Soak 1 cup of kidney beans overnight in cold water.
- 2 Drain beans, cover with fresh cold water, and add the chopped onion, carrot, bacon slices, and a pinch of baking soda.
- 3 Simmer until the beans are tender, then drain the liquid.
- 4 Season with butter, salt, and pepper, and serve hot.
