Butter And Custard Lemon Pie
Ingredients
- 1 cup water
- 1 cup sugar
- 1 lemon
- 2 eggs
- 1 tablespoon butter
- 1 heaping tablespoon flour
- 1 tablespoon powdered sugar
Method
- 1 Prick a pie crust with a fork and bake it in the pan until set.
- 2 Boil the water and sugar together in a saucepan.
- 3 In a bowl, beat the egg yolks with the lemon zest, butter, and flour.
- 4 Slowly pour the boiling sugar syrup into the yolk mixture while stirring.
- 5 Return the mixture to the heat and boil until it thickens like custard.
- 6 Pour the hot filling into the baked crust and let it cool slightly.
- 7 Beat the egg whites until stiff peaks form, then fold in the powdered sugar.
- 8 Spread the meringue over the filling and bake until golden brown.
