Bulgur Pilaf With Chickpeas And Vegetables

Ingredients

  • 1 medium onion, chopped
  • 1 cup broccoli, chopped
  • 1 carrot, shredded
  • 1/3 cup green pepper, chopped
  • 1 teaspoon fresh parsley, chopped
  • 1 1/2 cups canola oil
  • 2 cups bulgur, dry
  • 8 ounces chicken broth, low-sodium
  • 1 can chickpeas, drained

Method

  1. 1 Wash and chop the onion, broccoli, carrot, pepper, and parsley.
  2. 2 Heat canola oil in a large skillet over medium heat. Add onions and cook until soft.
  3. 3 Add bulgur and stir to coat with oil. Pour in 2 cups chicken broth and bring to a boil.
  4. 4 Lower heat, add remaining vegetables and chickpeas. Cook for 10 minutes until liquid is absorbed.
  5. 5 Stir in parsley. Serve warm or cold.
