Bulgur Pilaf With Chickpeas And Vegetables
Ingredients
- 1 medium onion, chopped
- 1 cup broccoli, chopped
- 1 carrot, shredded
- 1/3 cup green pepper, chopped
- 1 teaspoon fresh parsley, chopped
- 1 1/2 cups canola oil
- 2 cups bulgur, dry
- 8 ounces chicken broth, low-sodium
- 1 can chickpeas, drained
Method
- 1 Wash and chop the onion, broccoli, carrot, pepper, and parsley.
- 2 Heat canola oil in a large skillet over medium heat. Add onions and cook until soft.
- 3 Add bulgur and stir to coat with oil. Pour in 2 cups chicken broth and bring to a boil.
- 4 Lower heat, add remaining vegetables and chickpeas. Cook for 10 minutes until liquid is absorbed.
- 5 Stir in parsley. Serve warm or cold.
