Browned Meat And Root Vegetable Stew
Ingredients
- 2 slices bacon
- veal, mutton, or beef, sliced
- sliced onions
- turnips, sliced
- carrots, sliced
- celery, chopped
- fresh thyme
- ground allspice
- water
- salt and pepper to taste
Method
- 1 Place bacon in the bottom of a stew pan. Layer sliced meat (veal, mutton, or beef) on top.
- 2 Add sliced onions, turnips, carrots, celery, thyme, and allspice. Add a little water.
- 3 Stew over heat until the bottom browns and the pan hisses, indicating caramelization.
- 4 Pour in boiling water and stew for 1.5 hours, adjusting time based on quantity.
- 5 Season with salt and pepper before serving.
