Browned Beef And Vegetable Soup With Toast
Ingredients
- 1 hind shin of beef
- 1 tsp black pepper
- 2 tsp salt
- 3 medium onions, chopped
- 6 small carrots, peeled and chopped
- 2 small turnips, peeled and diced
- 3 quarts water
- 1 small bundle fresh thyme and parsley
- 1 cup celery, chopped
- 1 tbsp brown sugar
- Toasted bread, diced
Method
- 1 Remove all meat from the beef shin bone and discard the bone. Wash the meat and place it in a large pot.
- 2 Add pepper, salt, onions, carrots, turnips, and water. Cover and bring to a gentle, steady boil.
- 3 Simmer for 4 hours, skimming off any scum that rises to the surface. Do not let it boil over.
- 4 Add the herb bundle and celery. Simmer for 1 more hour. Remove the herb bundle.
- 5 Melt brown sugar in a skillet until dark. Stir in a ladle of soup to create a browning, then mix back into the pot.
- 6 Serve the soup with the meat and vegetables, garnished with diced toasted bread.
