Browned Beef And Veal Gravy
Ingredients
- 1 lb lean beef or veal, cut into small pieces
- 1 tbsp butter
- 1 tsp salt
- 1 tsp pepper
- 1 pint boiling water
Method
- 1 Beat, score, and cut meat into small pieces. Season with salt and pepper.
- 2 Place meat in a stew-pan with butter. Heat gradually, shaking frequently, until browned (about 30 minutes).
- 3 Add boiling water. Cover closely and simmer on low heat for 3 hours, skimming occasionally.
- 4 Let settle, then strain the liquid. Reserve for thickening later.
