Browned Beef And Veal Gravy

Ingredients

  • 1 lb lean beef or veal, cut into small pieces
  • 1 tbsp butter
  • 1 tsp salt
  • 1 tsp pepper
  • 1 pint boiling water

Method

  1. 1 Beat, score, and cut meat into small pieces. Season with salt and pepper.
  2. 2 Place meat in a stew-pan with butter. Heat gradually, shaking frequently, until browned (about 30 minutes).
  3. 3 Add boiling water. Cover closely and simmer on low heat for 3 hours, skimming occasionally.
  4. 4 Let settle, then strain the liquid. Reserve for thickening later.
