Brown Sugar Spice Cake With Raisins And Icing
Ingredients
- 2 cups light brown sugar
- ½ cup shortening
- 2 eggs
- ¾ cup milk
- 3 tsp baking powder
- 1 cup chopped raisins
- 2¼ cups flour
- 1 tsp cinnamon
- ½ tsp cloves
- ½ tsp nutmeg
- ½ tsp salt
- 2 cups sugar (for icing)
- ¾ cup milk (for icing)
- 2 tbsp butter (for icing)
- vanilla extract (for icing)
Method
- 1 Preheat oven to 350°F. Grease two layer cake pans.
- 2 Cream brown sugar and shortening until fluffy. Beat in eggs until light.
- 3 Sift flour, salt, spices, and baking powder together twice.
- 4 Alternately add dry ingredients and milk to the creamed mixture, beating thoroughly.
- 5 Fold in floured raisins. Pour batter into prepared pans.
- 6 Bake for 25-30 minutes. Cool completely before frosting.
