Brown Sugar Pickled Figs
Ingredients
- 7 pounds ripe figs
- 3 pounds sugar (rich brown)
- 1 quart vinegar
- a small handful whole cloves
Method
- 1 Make syrup by boiling sugar, vinegar, and cloves for five minutes. Remove and cool.
- 2 Pour the cooled syrup over the figs. Let them stand for two days.
- 3 Drain the syrup, pour it back over the figs, and bring to a boil.
- 4 Return the figs to the boiling syrup and let all boil together briefly.
- 5 Pack the hot figs and syrup into air-tight jars.
