Brown Sugar Pickled Figs

Ingredients

  • 7 pounds ripe figs
  • 3 pounds sugar (rich brown)
  • 1 quart vinegar
  • a small handful whole cloves

Method

  1. 1 Make syrup by boiling sugar, vinegar, and cloves for five minutes. Remove and cool.
  2. 2 Pour the cooled syrup over the figs. Let them stand for two days.
  3. 3 Drain the syrup, pour it back over the figs, and bring to a boil.
  4. 4 Return the figs to the boiling syrup and let all boil together briefly.
  5. 5 Pack the hot figs and syrup into air-tight jars.
