Brown Sugar Peppermint Candy Sticks
Ingredients
- 8 lbs brown sugar
- 2 lbs glucose
- 3 pints water
- Peppermint flavoring
Method
- 1 Bring brown sugar, glucose, and water to the crack stage in the usual way.
- 2 Pour the mixture onto a slab and work in the peppermint flavoring.
- 3 Cut off a 1½-pound piece and pull it over a hook until light and satiny.
- 4 Roll the pulled sugar into a long stick and cut it into six equal pieces.
- 5 Lay the six pieces on the remaining solid boil, spaced equally.
- 6 Roll the boil around the pieces, taper one end to a point, and pull to length.
- 7 Twist the sticks so the stripes form a pretty spiral pattern.
