Brown Sugar Peppermint Candy Sticks

Ingredients

  • 8 lbs brown sugar
  • 2 lbs glucose
  • 3 pints water
  • Peppermint flavoring

Method

  1. 1 Bring brown sugar, glucose, and water to the crack stage in the usual way.
  2. 2 Pour the mixture onto a slab and work in the peppermint flavoring.
  3. 3 Cut off a 1½-pound piece and pull it over a hook until light and satiny.
  4. 4 Roll the pulled sugar into a long stick and cut it into six equal pieces.
  5. 5 Lay the six pieces on the remaining solid boil, spaced equally.
  6. 6 Roll the boil around the pieces, taper one end to a point, and pull to length.
  7. 7 Twist the sticks so the stripes form a pretty spiral pattern.
