Brown Sugar Meringue Pie
Ingredients
- 1 cup brown sugar
- 1 tablespoon butter
- 2 tablespoons milk
- 2 egg yolks
- 1 tablespoon flour
- 1½ cups milk
- 1½ teaspoons vanilla extract
- 1 baked pie crust
- 2 egg whites
Method
- 1 In a saucepan, combine brown sugar, butter, and 2 tablespoons milk. Cook over medium heat, stirring constantly, until the mixture looks waxy and thickens slightly.
- 2 In a separate bowl, whisk egg yolks, flour, and 1½ cups milk until smooth. Gradually whisk this mixture into the hot sugar mixture in the saucepan.
- 3 Cook the combined mixture over medium heat, stirring constantly, until it thickens to a pudding consistency. Remove from heat and stir in vanilla extract.
- 4 Pour the filling into the baked pie crust. Beat the egg whites until stiff peaks form and spread them over the hot filling.
- 5 Return the pie to a 350°F oven for 2-3 minutes, just until the meringue is set and lightly golden. Cool before serving.
