Brown Sugar Coconut Candy
Ingredients
- 14 lbs brown sugar
- 6 large coconuts, sliced
- 3 pints water
Method
- 1 Slice the coconuts into thin slices using a spokeshave or machine; leave the brown skin on.
- 2 Melt the brown sugar in the water and boil until it reaches the soft-ball stage.
- 3 Add the sliced coconuts and stir to combine.
- 4 Remove from heat and rub the mixture against the side of the pan until it becomes cloudy.
- 5 Stir until the mixture becomes cloudy and thick, then turn out into tins or slabs.
- 6 Mark into squares or bars with a sharp knife and break apart when cold.
