Brown Sugar Coconut Candy

Ingredients

  • 14 lbs brown sugar
  • 6 large coconuts, sliced
  • 3 pints water

Method

  1. 1 Slice the coconuts into thin slices using a spokeshave or machine; leave the brown skin on.
  2. 2 Melt the brown sugar in the water and boil until it reaches the soft-ball stage.
  3. 3 Add the sliced coconuts and stir to combine.
  4. 4 Remove from heat and rub the mixture against the side of the pan until it becomes cloudy.
  5. 5 Stir until the mixture becomes cloudy and thick, then turn out into tins or slabs.
  6. 6 Mark into squares or bars with a sharp knife and break apart when cold.
