Brown Sugar Cinnamon Stewed Pears

Ingredients

  • 1 dozen stewing pears
  • 1 quart water
  • 1 pound loaf sugar
  • 2 inches cinnamon stick

Method

  1. 1 Peel pears carefully and remove cores, leaving them whole.
  2. 2 Dissolve sugar in water in an enamelled stewpan. Add pears, cover, and simmer for two hours.
  3. 3 Remove from heat and let cool completely uncovered. Lift pears into a glass dish.
  4. 4 Strain syrup into a small stewpan and boil over high heat for 15 minutes until reduced to three tablespoons.
  5. 5 Pour reduced syrup over pears and allow to cool thoroughly before serving.
