Brown Sugar Butterscotch Pie With Meringue
Ingredients
- 1 egg, separated
- 1 cup dark brown sugar
- 1 cup milk
- 3 tablespoons flour
- 2 tablespoons Crisco or shortening
- 3 tablespoons water
- 1/4 teaspoon salt
- 1 tablespoon powdered sugar
- 1 baked pie crust
- 1 teaspoon vanilla extract
Method
- 1 In a saucepan, whisk together the egg yolk, brown sugar, flour, milk, water, Crisco, salt, and vanilla.
- 2 Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
- 3 Pour the hot filling into the baked pie shell.
- 4 Beat the egg white until foamy, then gradually beat in the powdered sugar until stiff peaks form.
- 5 Spread the meringue over the hot filling to seal the edges. Bake at 350°F for 10-15 minutes until lightly browned.
