Brown Sugar Butter Sweet Potato Skewers

Ingredients

  • 2 large sweet potatoes
  • 2 tbsp melted butter
  • 2 tbsp brown sugar

Method

  1. 1 Wash, peel, and slice sweet potatoes into 1/3-inch rounds.
  2. 2 Thread 3-4 slices onto each skewer and parboil for 6 minutes. Drain well.
  3. 3 Brush skewers with melted butter and sprinkle generously with brown sugar.
  4. 4 Bake in a 425°F oven until well browned and tender, about 10 minutes.
