Brown Sugar Banana Muffins With Icing
Ingredients
- 1 cup mashed banana
- 1 cup brown sugar
- 4 tablespoons shortening
- 2 cups flour
- 5 teaspoons baking powder
- 1 cup milk
- 1/2 teaspoon nutmeg
- Water icing, for topping
Method
- 1 Rub bananas through a sieve to measure 1 cup. Place in a mixing bowl.
- 2 Add brown sugar, shortening, flour, baking powder, milk, and nutmeg. Beat to mix.
- 3 Pour batter into well-greased and floured muffin pans.
- 4 Bake in a moderate oven (350°F) for 25 minutes.
- 5 Ice the tops with water icing while warm.
