  • 1 cup mashed banana
  • 1 cup brown sugar
  • 4 tablespoons shortening
  • 2 cups flour
  • 5 teaspoons baking powder
  • 1 cup milk
  • 1/2 teaspoon nutmeg
  • Water icing, for topping

Method

  1. 1 Rub bananas through a sieve to measure 1 cup. Place in a mixing bowl.
  2. 2 Add brown sugar, shortening, flour, baking powder, milk, and nutmeg. Beat to mix.
  3. 3 Pour batter into well-greased and floured muffin pans.
  4. 4 Bake in a moderate oven (350°F) for 25 minutes.
