Brown Sauce Celery On Toast
Ingredients
- 3 heads celery
- 3 cups hot stock
- ¼ cup butter or drippings
- ½ carrot
- ½ onion
- 1 tsp salt
- Cayenne pepper
- Flour
- Butter (for browning flour)
- Toast
Method
- 1 Trim celery, cut into 4-inch lengths, and blanch in boiling water for 10 minutes. Drain and rinse in cold water.
- 2 Bundle celery and simmer in stock with butter, carrot, onion, salt, and cayenne until tender. Drain celery and reserve liquid.
- 3 Skim fat from liquid. Brown flour in butter, then whisk in liquid to thicken into a sauce.
- 4 Arrange celery on toast, pour sauce over, and serve.
