Brown Sauce Celery On Toast

Ingredients

  • 3 heads celery
  • 3 cups hot stock
  • ¼ cup butter or drippings
  • ½ carrot
  • ½ onion
  • 1 tsp salt
  • Cayenne pepper
  • Flour
  • Butter (for browning flour)
  • Toast

Method

  1. 1 Trim celery, cut into 4-inch lengths, and blanch in boiling water for 10 minutes. Drain and rinse in cold water.
  2. 2 Bundle celery and simmer in stock with butter, carrot, onion, salt, and cayenne until tender. Drain celery and reserve liquid.
  3. 3 Skim fat from liquid. Brown flour in butter, then whisk in liquid to thicken into a sauce.
  4. 4 Arrange celery on toast, pour sauce over, and serve.
