Brown Rice Tomato Soup

Ingredients

  • 2 pints water or stock
  • Salt and pepper to taste
  • 2 small onions
  • 2 tablespoons Crisco
  • 1 cup rice
  • 1 cup canned tomatoes, or 4 fresh ones

Method

  1. 1 Wash and drain the rice.
  2. 2 Heat Crisco in a saucepan, add rice, and stir constantly until golden brown.
  3. 3 Add water or stock, onions, chopped tomatoes, and seasonings.
  4. 4 Cook slowly for one hour.
