Brown Rice Pineapple Yogurt Pudding
Ingredients
- 1 cup cooked brown rice (chilled)
- 1 cup low-fat yogurt (plain or vanilla)
- 1 cup applesauce
- 1/4 cup raisins
- 8 ounces crushed pineapple in juice
Method
- 1 Drain the crushed pineapple and set aside 1/4 cup.
- 2 In a medium bowl, mix the chilled brown rice, yogurt, applesauce, raisins, and remaining pineapple.
- 3 Serve the mixture in small dishes.
