Brown Rice And Black Bean Stuffed Peppers

Ingredients

  • 1 cup uncooked brown rice
  • 1 can (15 ounces) black beans, rinsed
  • 4 bell peppers (any color)
  • 1 cup reduced-fat shredded cheddar cheese
  • 1 tomato, sliced
  • 1 cup salsa
  • Salt to taste (optional)

Method

  1. 1 Preheat oven to 400°F. Cook brown rice according to package directions.
  2. 2 Wash peppers, cut off tops, and remove seeds.
  3. 3 Drain and rinse black beans. Combine beans, cooked rice, salsa, and salt.
  4. 4 Spoon 3 tablespoons of mixture into the bottom of each pepper.
  5. 5 Place a tomato slice on the mixture and sprinkle with 2 tablespoons cheese.
  6. 6 Repeat filling steps to fill peppers completely, but do not add cheese yet.
  7. 7 Bake for 30 minutes. Top each with 2 tablespoons cheese and bake 15 minutes more.
