Brown Rice And Black Bean Stuffed Peppers
Ingredients
- 1 cup uncooked brown rice
- 1 can (15 ounces) black beans, rinsed
- 4 bell peppers (any color)
- 1 cup reduced-fat shredded cheddar cheese
- 1 tomato, sliced
- 1 cup salsa
- Salt to taste (optional)
Method
- 1 Preheat oven to 400°F. Cook brown rice according to package directions.
- 2 Wash peppers, cut off tops, and remove seeds.
- 3 Drain and rinse black beans. Combine beans, cooked rice, salsa, and salt.
- 4 Spoon 3 tablespoons of mixture into the bottom of each pepper.
- 5 Place a tomato slice on the mixture and sprinkle with 2 tablespoons cheese.
- 6 Repeat filling steps to fill peppers completely, but do not add cheese yet.
- 7 Bake for 30 minutes. Top each with 2 tablespoons cheese and bake 15 minutes more.
