Brown Rice And Black Bean Casserole

Ingredients

  • 1/2 medium onion, chopped
  • 1 green pepper, diced
  • 1 tablespoon canola oil
  • 1 (14.5 ounce) can low-sodium stewed tomatoes
  • 1/2 teaspoon oregano leaves
  • 1 1/2 teaspoons garlic powder
  • 1 cup instant uncooked brown rice
  • 1 (16 ounce) can black beans or beans of your choice

Method

  1. 1 Sauté onion and green pepper in oil in a large pan until tender, being careful not to brown.
  2. 2 Add tomatoes, beans with their liquid, oregano, and garlic powder. Bring to a boil.
  3. 3 Stir in the rice and cover the pan.
  4. 4 Reduce heat to low and simmer for 5 minutes.
  5. 5 Remove from heat and let stand covered for 5 minutes before serving.
