Brown Rice And Black Bean Casserole
Ingredients
- 1/2 medium onion, chopped
- 1 green pepper, diced
- 1 tablespoon canola oil
- 1 (14.5 ounce) can low-sodium stewed tomatoes
- 1/2 teaspoon oregano leaves
- 1 1/2 teaspoons garlic powder
- 1 cup instant uncooked brown rice
- 1 (16 ounce) can black beans or beans of your choice
Method
- 1 Sauté onion and green pepper in oil in a large pan until tender, being careful not to brown.
- 2 Add tomatoes, beans with their liquid, oregano, and garlic powder. Bring to a boil.
- 3 Stir in the rice and cover the pan.
- 4 Reduce heat to low and simmer for 5 minutes.
- 5 Remove from heat and let stand covered for 5 minutes before serving.
