Brown Rice And Bean Salad
Ingredients
- 1 cup cooked brown rice
- 1 cup shredded carrot
- 1 cup finely chopped broccoli
- 1 small red onion, chopped
- 1 chopped tomato
- 1 can bell peppers (green, red, or yellow)
- 1 can kidney beans (15 oz), drained and rinsed
- 2 tablespoons chopped cilantro or other fresh herbs
- 2 tablespoons red wine vinegar (or white or cider)
- 1 tablespoon vegetable oil
- Salt and pepper to taste
Method
- 1 Wash and chop the vegetables, then mix them with the cooked brown rice in a large bowl.
- 2 In a small bowl, whisk together the vinegar, oil, cilantro, salt, and pepper to create the dressing.
- 3 Pour the dressing over the rice and vegetable mixture, add the drained kidney beans, and toss well to combine.
- 4 Serve the salad cold and enjoy.
