Brown Rice And Bean Salad

Ingredients

  • 1 cup cooked brown rice
  • 1 cup shredded carrot
  • 1 cup finely chopped broccoli
  • 1 small red onion, chopped
  • 1 chopped tomato
  • 1 can bell peppers (green, red, or yellow)
  • 1 can kidney beans (15 oz), drained and rinsed
  • 2 tablespoons chopped cilantro or other fresh herbs
  • 2 tablespoons red wine vinegar (or white or cider)
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste

Method

  1. 1 Wash and chop the vegetables, then mix them with the cooked brown rice in a large bowl.
  2. 2 In a small bowl, whisk together the vinegar, oil, cilantro, salt, and pepper to create the dressing.
