Brown Onion Soup With Toasted Bread

Ingredients

  • 2 tablespoons fat
  • 1 onion
  • 2 tablespoons flour
  • 1 pint stock
  • salt and pepper to taste
  • 1 tablespoon finely chopped parsley
  • bread, cut into finger lengths and toasted

Method

  1. 1 Melt fat in a pot and fry the onion until brown.
  2. 2 Add flour and brown well.
  3. 3 Pour in stock, bring to a simmer, and cook for five minutes.
  4. 4 Season with salt and pepper to taste.
  5. 5 Strain the soup into a tureen and sprinkle with chopped parsley.
  6. 6 Serve with toasted bread fingers.
