Brown Onion Soup With Toasted Bread
Ingredients
- 2 tablespoons fat
- 1 onion
- 2 tablespoons flour
- 1 pint stock
- salt and pepper to taste
- 1 tablespoon finely chopped parsley
- bread, cut into finger lengths and toasted
Method
- 1 Melt fat in a pot and fry the onion until brown.
- 2 Add flour and brown well.
- 3 Pour in stock, bring to a simmer, and cook for five minutes.
- 4 Season with salt and pepper to taste.
- 5 Strain the soup into a tureen and sprinkle with chopped parsley.
- 6 Serve with toasted bread fingers.
