Brown Onion Soup With Bread Crumbs

Ingredients

  • 12 large Spanish onions
  • good butter
  • 2 quarts boiling water or weak veal broth
  • salt and pepper to taste
  • crisp bread crumbs

Method

  1. 1 Slice the onions and fry them in butter until very brown but not burnt.
  2. 2 Add the boiling water or veal broth, salt, and pepper. Stew until the onions are tender and almost dissolved.
  3. 3 Stir in crisp bread crumbs to thicken the soup to the desired consistency.
  4. 4 Serve hot.
