Brown Onion Soup With Bread Crumbs
Ingredients
- 12 large Spanish onions
- good butter
- 2 quarts boiling water or weak veal broth
- salt and pepper to taste
- crisp bread crumbs
Method
- 1 Slice the onions and fry them in butter until very brown but not burnt.
- 2 Add the boiling water or veal broth, salt, and pepper. Stew until the onions are tender and almost dissolved.
- 3 Stir in crisp bread crumbs to thicken the soup to the desired consistency.
- 4 Serve hot.
