Brown Onion Sauce With Wine

Ingredients

  • 1 quart onions, peeled and sliced
  • 1 ounce butter
  • 0.5 ounce flour
  • 1 cup broth (or water)
  • Salt and pepper to taste
  • 1 tablespoon claret or port wine
  • 1 tablespoon mushroom ketchup
  • Lemon juice or vinegar to taste

Method

  1. 1 Place sliced onions and butter in a stew-pan over slow heat. Turn onions until lightly browned.
  2. 2 Stir in flour gradually. Add broth, salt, and pepper. Boil for a few minutes.
  3. 3 Add wine and mushroom ketchup. Rub the mixture through a fine sieve or tamis.
  4. 4 Adjust seasoning with lemon juice or vinegar if needed. Serve warm.
