Brown Onion Sauce With Wine
Ingredients
- 1 quart onions, peeled and sliced
- 1 ounce butter
- 0.5 ounce flour
- 1 cup broth (or water)
- Salt and pepper to taste
- 1 tablespoon claret or port wine
- 1 tablespoon mushroom ketchup
- Lemon juice or vinegar to taste
Method
- 1 Place sliced onions and butter in a stew-pan over slow heat. Turn onions until lightly browned.
- 2 Stir in flour gradually. Add broth, salt, and pepper. Boil for a few minutes.
- 3 Add wine and mushroom ketchup. Rub the mixture through a fine sieve or tamis.
- 4 Adjust seasoning with lemon juice or vinegar if needed. Serve warm.
