Brown Onion And Root Vegetable Broth

Ingredients

  • 1 large Spanish onion
  • 1 teaspoon mixed herbs
  • 1/2 head celery
  • 1 1/2 oz butter
  • 1 carrot
  • 1 turnip
  • pepper and salt to taste
  • 5 pints water
  • nutmeg to taste

Method

  1. 1 Chop the onion finely and fry it brown in the butter in a saucepan.
  2. 2 Add 5 pints of water to the saucepan with the fried onions.
  3. 3 Prepare and cut the carrot, turnip, and celery into small pieces.
  4. 4 Add the vegetables, nutmeg, herbs, pepper, and salt to the water.
  5. 5 Cook until vegetables are tender, then drain the liquid.
  6. 6 Return the liquid to the saucepan and bring to a boil before serving.
