Brown Onion And Root Vegetable Broth
Ingredients
- 1 large Spanish onion
- 1 teaspoon mixed herbs
- 1/2 head celery
- 1 1/2 oz butter
- 1 carrot
- 1 turnip
- pepper and salt to taste
- 5 pints water
- nutmeg to taste
Method
- 1 Chop the onion finely and fry it brown in the butter in a saucepan.
- 2 Add 5 pints of water to the saucepan with the fried onions.
- 3 Prepare and cut the carrot, turnip, and celery into small pieces.
- 4 Add the vegetables, nutmeg, herbs, pepper, and salt to the water.
- 5 Cook until vegetables are tender, then drain the liquid.
- 6 Return the liquid to the saucepan and bring to a boil before serving.
