Brown Lentil Vegetable Stock
Ingredients
- 1 pint soaked lentils
- 3 pints water
- 1 carrot, sliced
- 1 turnip, sliced
- 1 ounce butter
- 1 teaspoon salt
- 1 onion, sliced
- 6 peppercorns
Method
- 1 Dissolve butter in a large saucepan over medium heat.
- 2 Add lentils, water, sliced carrot, turnip, onion, and peppercorns.
- 3 Boil for one hour.
- 4 Add salt and re-boil until lentils are quite tender.
- 5 Strain the liquid to remove solids.
