Brown Lentil Vegetable Stock

Ingredients

  • 1 pint soaked lentils
  • 3 pints water
  • 1 carrot, sliced
  • 1 turnip, sliced
  • 1 ounce butter
  • 1 teaspoon salt
  • 1 onion, sliced
  • 6 peppercorns

Method

  1. 1 Dissolve butter in a large saucepan over medium heat.
  2. 2 Add lentils, water, sliced carrot, turnip, onion, and peppercorns.
  3. 3 Boil for one hour.
  4. 4 Add salt and re-boil until lentils are quite tender.
  5. 5 Strain the liquid to remove solids.
