Brown Duck With Ham And Vegetables
Ingredients
- 1 wild duck
- 1 thick slice ham (with lean and fat)
- 1 celery stalk
- 1 bunch parsley
- 1 carrot
- 1/2 medium onion
- salt and pepper
- water
- vinegar or boiling water (for cleaning)
Method
- 1 Clean the duck, removing head and legs. Set aside giblets. If needed, wash in vinegar or scald in boiling water to remove gamey taste.
- 2 Chop ham, celery, parsley, carrot, and onion finely. Place in a saucepan.
- 3 Lay the duck on top of the chopped ingredients. Season with salt and pepper.
- 4 Brown the duck on all sides. Add water to cover partially and cook until done.
