Brown Duck With Ham And Vegetables

Ingredients

  • 1 wild duck
  • 1 thick slice ham (with lean and fat)
  • 1 celery stalk
  • 1 bunch parsley
  • 1 carrot
  • 1/2 medium onion
  • salt and pepper
  • water
  • vinegar or boiling water (for cleaning)

Method

  1. 1 Clean the duck, removing head and legs. Set aside giblets. If needed, wash in vinegar or scald in boiling water to remove gamey taste.
  2. 2 Chop ham, celery, parsley, carrot, and onion finely. Place in a saucepan.
  3. 3 Lay the duck on top of the chopped ingredients. Season with salt and pepper.
  4. 4 Brown the duck on all sides. Add water to cover partially and cook until done.
