Brown Duck Stew With Turnips And Garlic
Ingredients
- 1 duck, cut into pieces
- 2 tbsp butter
- 4-6 young turnips, peeled and cut into equal sizes
- 1 tbsp powdered sugar
- 1 cup duck or chicken stock
- Salt and pepper to taste
- 1 bouquet garni (parsley, chives, bay leaf)
- 1/2 head garlic, peeled
Method
- 1 Brown the duck pieces in butter in a large stewpan. Remove duck and set aside.
- 2 In the same pan, brown the turnips in the remaining butter. Remove and set aside.
- 3 Add powdered sugar to the pan juices, then stir in stock. Simmer until reduced to a thin brown sauce.
- 4 Season sauce with salt, pepper, bouquet garni, garlic, and bay leaf. Return duck to pan and simmer until half cooked.
- 5 Add turnips to the pan. Cover and cook slowly, turning duck occasionally to avoid breaking turnips. Skim off grease.
- 6 Remove bouquet garni and garlic. Serve hot.
