Brown Butter White Fish Chowder
Ingredients
- 1 onion
- butter
- white fish, cut into small pieces
- flour, for rolling fish
- 2 tablespoons flour
- 1 quart water
- seasoning
Method
- 1 Fry 1 onion in butter.
- 2 Roll fish pieces in flour, then fry in the onion butter. Remove fish and set aside on brown paper.
- 3 In a saucepan, stir 2 tablespoons flour until brown. Gradually stir in 1 quart water.
- 4 Bring to a boil, then add the fried fish and seasoning.
