Brown Butter Walnut Currant Cookies
Ingredients
- 1 cup butter
- 1½ cups sugar
- 3 eggs, well beaten
- 1 teaspoon baking soda
- 1½ tablespoons hot water
- 3¼ cups flour
- ½ teaspoon salt
- 1 teaspoon cinnamon
- 1 cup chopped English walnuts
- ½ cup currants
- ½ cup chopped and seeded raisins
Method
- 1 Cream butter, then gradually beat in sugar and eggs.
- 2 Dissolve baking soda in hot water and add to the butter mixture.
- 3 Sift together flour, salt, and cinnamon. Stir in half of this mixture.
- 4 Fold in walnuts, currants, and raisins, then add remaining flour and beat well.
- 5 Drop by spoonfuls 1 inch apart onto a buttered sheet.
- 6 Bake in a moderate oven (350°F) until set.
