Brown Butter Walnut Currant Cookies

Ingredients

  • 1 cup butter
  • 1½ cups sugar
  • 3 eggs, well beaten
  • 1 teaspoon baking soda
  • 1½ tablespoons hot water
  • 3¼ cups flour
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1 cup chopped English walnuts
  • ½ cup currants
  • ½ cup chopped and seeded raisins

Method

  1. 1 Cream butter, then gradually beat in sugar and eggs.
  2. 2 Dissolve baking soda in hot water and add to the butter mixture.
  3. 3 Sift together flour, salt, and cinnamon. Stir in half of this mixture.
  4. 4 Fold in walnuts, currants, and raisins, then add remaining flour and beat well.
  5. 5 Drop by spoonfuls 1 inch apart onto a buttered sheet.
  6. 6 Bake in a moderate oven (350°F) until set.
