Brown Butter Veal Stew With Herbs

Ingredients

  • 1 breast of veal, cut into pieces
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 cup broth
  • Salt and pepper to taste
  • 1 bunch parsley
  • 2 scallions, chopped
  • 2 cloves
  • 1 sprig thyme
  • 1 bay leaf
  • 1 sprig basil
  • 1 tsp vinegar

Method

  1. 1 Melt butter in a large pot over medium heat. Stir in flour and cook until golden brown.
  2. 2 Add broth, veal, parsley, scallions, cloves, thyme, bay leaf, basil, salt, pepper, and vinegar. Stir to combine.
  3. 3 Cover and simmer on low heat for about 1.5 to 2 hours, or until the veal is tender and the sauce has thickened.
  4. 4 Remove the veal and keep warm. Skim excess fat from the sauce, then pour the glaze over the meat to serve.
