Brown Butter Veal Stew With Herbs
Ingredients
- 1 breast of veal, cut into pieces
- 1 tbsp butter
- 1 tbsp flour
- 1 cup broth
- Salt and pepper to taste
- 1 bunch parsley
- 2 scallions, chopped
- 2 cloves
- 1 sprig thyme
- 1 bay leaf
- 1 sprig basil
- 1 tsp vinegar
Method
- 1 Melt butter in a large pot over medium heat. Stir in flour and cook until golden brown.
- 2 Add broth, veal, parsley, scallions, cloves, thyme, bay leaf, basil, salt, pepper, and vinegar. Stir to combine.
- 3 Cover and simmer on low heat for about 1.5 to 2 hours, or until the veal is tender and the sauce has thickened.
- 4 Remove the veal and keep warm. Skim excess fat from the sauce, then pour the glaze over the meat to serve.
