Brown Butter Turnip Ragout
Ingredients
- 1 large yellow turnip
- butter
- flour
- salt
- pepper
Method
- 1 Peel, wash, and dry the turnip, then cut it into oblong pieces.
- 2 Brown a generous amount of butter in a skillet. Add the turnip slices and simmer until nicely browned, being careful not to burn them.
- 3 Transfer the turnips to a saucepan. Add just enough water to cover, cover tightly, and simmer until tender.
- 4 In a separate pan, brown a small amount of butter and flour together to create a gravy. Stir this into the turnips to thicken.
- 5 Season with salt and pepper to taste and serve immediately.
