Brown Butter Sweet Potato Chestnut Mash
Ingredients
- sweet potatoes
- ripe chestnuts
- sugar
- cream
- butter
Method
- 1 Boil sweet potatoes and ripe chestnuts separately in water with a little sugar added for the chestnuts.
- 2 Mash the cooked potatoes and chestnuts together well.
- 3 Add cream and butter, then beat the mixture until light and fluffy.
- 4 Place in a moderate oven (350°F) for a minute or two to brown the top.
