Brown Butter String Beans With Lemon Egg Sauce

Ingredients

  • less than 1 lb string beans
  • butter
  • salt
  • pepper
  • 1 egg yolk
  • 1 tsp flour
  • juice of ½ small lemon
  • ½ cup defatted broth

Method

  1. 1 Trim the ends and remove strings from the string beans. Partially cook them in moderately salted water.
  2. 2 Drain the beans and brown them in butter with salt and pepper.
  3. 3 In a small saucepan, whisk the egg yolk, flour, and lemon juice. Stir in the cold broth.
  4. 4 Cook the sauce over heat, stirring continually, until it thickens like cream.
  5. 5 Pour the sauce over the string beans and heat together briefly before serving.
