Brown Butter String Beans With Lemon Egg Sauce
Ingredients
- less than 1 lb string beans
- butter
- salt
- pepper
- 1 egg yolk
- 1 tsp flour
- juice of ½ small lemon
- ½ cup defatted broth
Method
- 1 Trim the ends and remove strings from the string beans. Partially cook them in moderately salted water.
- 2 Drain the beans and brown them in butter with salt and pepper.
- 3 In a small saucepan, whisk the egg yolk, flour, and lemon juice. Stir in the cold broth.
- 4 Cook the sauce over heat, stirring continually, until it thickens like cream.
- 5 Pour the sauce over the string beans and heat together briefly before serving.
