Brown Butter Spiced Acorn Squash
Ingredients
- 1 acorn squash
- vegetable cooking spray
- 2 tablespoons salt
- 3 tablespoons margarine
- 1 teaspoon brown sugar
- 1/4 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- ginger
Method
- 1 Preheat oven to 400°F. Coat a baking sheet with cooking spray.
- 2 Wash squash, cut in half lengthwise, remove seeds, and slice into 1/2-inch pieces.
- 3 Place squash on baking sheet and sprinkle with salt.
- 4 Melt margarine in a saucepan over low heat. Stir in brown sugar, cinnamon, nutmeg, and ginger.
- 5 Spread the spiced margarine mixture over the squash. Bake for 20-25 minutes until tender.
