Brown Butter Spiced Acorn Squash

  • 1 acorn squash
  • vegetable cooking spray
  • 2 tablespoons salt
  • 3 tablespoons margarine
  • 1 teaspoon brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • ginger

Method

  1. 1 Preheat oven to 400°F. Coat a baking sheet with cooking spray.
  2. 2 Wash squash, cut in half lengthwise, remove seeds, and slice into 1/2-inch pieces.
  3. 3 Place squash on baking sheet and sprinkle with salt.
  4. 4 Melt margarine in a saucepan over low heat. Stir in brown sugar, cinnamon, nutmeg, and ginger.
  5. 5 Spread the spiced margarine mixture over the squash. Bake for 20-25 minutes until tender.
