Brown Butter Sorrel Sauce

Ingredients

  • 1 large bunch sorrel
  • 1 tbsp butter
  • Salt to taste
  • Black pepper to taste
  • 1 pinch powdered sugar
  • Optional: Cayenne, nutmeg, lemon juice

Method

  1. 1 Wash and clean the sorrel thoroughly.
  2. 2 Place sorrel and butter in a covered stew-pan over low heat for 15 minutes until wilted.
  3. 3 Press the mixture through a fine sieve using the back of a wooden spoon to extract the smooth green sauce.
  4. 4 Season with salt, pepper, and a pinch of sugar. Heat gently and serve warm.
