Brown Butter Sorrel Sauce
Ingredients
- 1 large bunch sorrel
- 1 tbsp butter
- Salt to taste
- Black pepper to taste
- 1 pinch powdered sugar
- Optional: Cayenne, nutmeg, lemon juice
Method
- 1 Wash and clean the sorrel thoroughly.
- 2 Place sorrel and butter in a covered stew-pan over low heat for 15 minutes until wilted.
- 3 Press the mixture through a fine sieve using the back of a wooden spoon to extract the smooth green sauce.
- 4 Season with salt, pepper, and a pinch of sugar. Heat gently and serve warm.
