Brown Butter Root Vegetable Stew
Ingredients
- 1 onion, diced
- 1 stalk celery, diced
- 1 turnip, diced
- 1 carrot, diced
- 1 sprig fresh thyme
- 1 cup broth
- 2 tbsp butter
- 1 tbsp flour
- Salt to taste
- Cayenne pepper to taste
Method
- 1 Dice the onion, celery, turnip, and carrot into small squares.
- 2 Stew the vegetables with thyme in broth and butter over medium heat until soft.
- 3 Fry the vegetables until they turn a fine brown color, turning occasionally with a fork.
- 4 If needed, sprinkle in flour to help brown and thicken the sauce.
- 5 Skim the sauce, strain through a sieve, and return to the pot.
- 6 Season with salt and cayenne pepper, add vegetables back in, and serve.
