Brown Butter Root Vegetable Stew

Ingredients

  • 1 onion, diced
  • 1 stalk celery, diced
  • 1 turnip, diced
  • 1 carrot, diced
  • 1 sprig fresh thyme
  • 1 cup broth
  • 2 tbsp butter
  • 1 tbsp flour
  • Salt to taste
  • Cayenne pepper to taste

Method

  1. 1 Dice the onion, celery, turnip, and carrot into small squares.
  2. 2 Stew the vegetables with thyme in broth and butter over medium heat until soft.
  3. 3 Fry the vegetables until they turn a fine brown color, turning occasionally with a fork.
  4. 4 If needed, sprinkle in flour to help brown and thicken the sauce.
  5. 5 Skim the sauce, strain through a sieve, and return to the pot.
  6. 6 Season with salt and cayenne pepper, add vegetables back in, and serve.
