Brown Butter Rice With Tomato Sauce

Ingredients

  • ½ cup rice
  • 1 tbsp butter
  • 1 small leek or white onion, chopped
  • vegetable stock
  • tomato sauce, for serving

Method

  1. 1 Wash the rice and drain well.
  2. 2 Melt butter in a large skillet over medium heat. Add the chopped leek or onion and rice, frying until the rice turns golden brown. Do not let it burn.
  3. 3 Add enough vegetable stock to nearly fill the skillet. Cook for 20 minutes until the rice is dry and every grain stands alone.
  4. 4 Transfer to a platter and serve with tomato sauce.
