Brown Butter Oyster Sauce
Ingredients
- 1 pint oysters in their own liquor
- 1/4 cup butter
- 1/4 cup flour
- 1/2 cup milk
- 1 cup oyster liquor
- 1 tsp anchovy paste
- salt and pepper to taste
Method
- 1 Parboil oysters in their own liquor, then skim and drain.
- 2 Melt butter in a saucepan over heat until it turns brown.
- 3 Stir in flour and cook, stirring constantly, until the mixture leaves the sides of the pan.
- 4 Whisk in milk and oyster liquor, then add anchovy paste, salt, and pepper.
- 5 Cook the sauce until thickened.
- 6 Add the oysters, reheat gently, and serve.
