Brown Butter Oyster Sauce

Ingredients

  • 1 pint oysters in their own liquor
  • 1/4 cup butter
  • 1/4 cup flour
  • 1/2 cup milk
  • 1 cup oyster liquor
  • 1 tsp anchovy paste
  • salt and pepper to taste

Method

  1. 1 Parboil oysters in their own liquor, then skim and drain.
  2. 2 Melt butter in a saucepan over heat until it turns brown.
  3. 3 Stir in flour and cook, stirring constantly, until the mixture leaves the sides of the pan.
  4. 4 Whisk in milk and oyster liquor, then add anchovy paste, salt, and pepper.
  5. 5 Cook the sauce until thickened.
  6. 6 Add the oysters, reheat gently, and serve.
