Brown Butter Oxtail Soup
Ingredients
- 1 ox tail, cut into pieces
- 1/2 cup shortening
- 1/2 cup flour
- 3 quarts cold water
- 1 bunch soup herbs
- 4 onions, chopped
- 1 carrot, diced
- 1 tsp thyme
- Salt and pepper to taste
- Juice of 1/2 lemon
Method
- 1 Soak the ox tail pieces in warm water for 30 minutes. Remove, wash, and wipe dry.
- 2 Roll each joint in flour. Heat shortening in a soup kettle and brown the ox tails well.
- 3 Add 1/2 cup flour to the pot and brown until deep mahogany. Add water, herbs, onions, carrot, and thyme.
- 4 Cook slowly for 3 hours. Season with salt, pepper, and lemon juice before serving.
