Brown Butter Oxtail Soup

Ingredients

  • 1 ox tail, cut into pieces
  • 1/2 cup shortening
  • 1/2 cup flour
  • 3 quarts cold water
  • 1 bunch soup herbs
  • 4 onions, chopped
  • 1 carrot, diced
  • 1 tsp thyme
  • Salt and pepper to taste
  • Juice of 1/2 lemon

Method

  1. 1 Soak the ox tail pieces in warm water for 30 minutes. Remove, wash, and wipe dry.
  2. 2 Roll each joint in flour. Heat shortening in a soup kettle and brown the ox tails well.
  3. 3 Add 1/2 cup flour to the pot and brown until deep mahogany. Add water, herbs, onions, carrot, and thyme.
  4. 4 Cook slowly for 3 hours. Season with salt, pepper, and lemon juice before serving.
