Brown Butter Onion And Ham Sauce

Ingredients

  • 1/2 cup butter
  • 1 tbsp flour
  • 6 large onions, minced
  • 1 large slice cold ham, minced
  • 1/4 cup broth or warm water
  • 1 tbsp lemon juice or vinegar
  • 1 tsp mustard

Method

  1. 1 Melt 1/2 cup butter in a saucepan with 1 tbsp flour. Simmer until the mixture turns a fine brown color.
  2. 2 Add 6 minced large onions and 1 minced slice of cold ham to the pan along with 1/4 cup broth or warm water and another piece of butter.
  3. 3 Skim the sauce well and let it stew gently for 20 minutes.
  4. 4 Before serving, stir in 1 tbsp lemon juice or vinegar and 1 tsp mustard.
