Brown Butter Onion And Ham Sauce
Ingredients
- 1/2 cup butter
- 1 tbsp flour
- 6 large onions, minced
- 1 large slice cold ham, minced
- 1/4 cup broth or warm water
- 1 tbsp lemon juice or vinegar
- 1 tsp mustard
Method
- 1 Melt 1/2 cup butter in a saucepan with 1 tbsp flour. Simmer until the mixture turns a fine brown color.
- 2 Add 6 minced large onions and 1 minced slice of cold ham to the pan along with 1/4 cup broth or warm water and another piece of butter.
- 3 Skim the sauce well and let it stew gently for 20 minutes.
- 4 Before serving, stir in 1 tbsp lemon juice or vinegar and 1 tsp mustard.
