Brown Butter Mutton Ragout With Turnips
Ingredients
- 3 pounds mutton breast, cut into squares
- Butter for browning
- Flour for dredging
- 4 cups water
- 1 sliced onion
- 1 diced turnip
- Salt and pepper to taste
- 1 bay leaf
- 1 tablespoon minced parsley
Method
- 1 Cut mutton breast into squares and brown in butter.
- 2 Dredge meat with flour, add 4 cups water, and stir until liquid thickens.
- 3 Add onion, turnip, salt, pepper, bay leaf, and parsley. Simmer for 1.5 hours.
- 4 Remove bay leaf and serve in a casserole.
